On A Healthy Note

Roasted Chicken Salad

Ingredients

Boneless, skinless
chicken breast : 7 1/2 pounds
Salt and pepper, to taste
Cayenne pepper : 2 pinches
Lavender : 1 tablespoon
Lemon juice : 1
Garlic, minced : 3 cloves
Roasted almonds,
sliced : 2/3 cup
Onion, chopped : 1

Celery, chopped : 1/2 bunch
Parsley leaves,
chopped : 2 tablespoons
Chives : 2 tablespoons
Tarragon leaves,
chopped : 2 tablespoons
Mayonnaise : 1 cup
Sour cream : 3/4 cup
Extra-virgin olive oil : 1/4 cup
Honey : 2 tablespoons

Method 

Preheat the oven to 400°F. Clean the chicken thoroughly. Sprinkle salt, pepper, cayenne, lavender, lemon, and garlic on chicken. Bake in a preheated oven until golden brown, about 20 minutes. Let chicken cool, and cut it into small strips. Add roasted almonds, onions, celery, dressing, and herbs. Mix together all the ingredients, add chicken. The salad can be served by itself or on a sandwich.

Classic Greek Salad

Ingredients

Cucumber diced : 1
Tomato diced : 1
Onion : 1
Lettuce : 1
Black and
green olives : 1 cup
Yellow capsicum
diced : 1

Feta cheese : 1 cup
Lemon juice : 1
Salt
Olive oil
Garlic
Dried oregano
Black pepper
Basil leaves

Method

Mix together the diced cucumber, pepper, tomatoes, onion, and lettuce. Add the black and green olives, garlic, and feta cheese. Put the vinegar and olive oil into a jar with the capers. Add a pinch of sugar and season with salt and black pepper. Seal and shake to mix. Toss the dressing on the salad and serve sprinkled with the basil leaves.

Classic Ceaser Salad

Ingredients

Romaine lettuce : 1 head
Olive oil : 1⁄2 cup
Baguette or small
loaf of crusty bread : 1 small
Clove garlic : 1
Parmesan cheese : 1/3 cup grated
Lemon juice : 1 large
Anchovy fillets : 1 oz
Egg yolks : 2
Kosher salt, to taste
Freshly ground black pepper, to taste Worcestershire sauce, to taste

Method

Heat a sauté pan over medium-low heat. Add 1⁄4 cup olive oil and put the bread cubes and sauté until crispy and golden. In a glass bowl, mash the garlic and anchovies together with a fork and combine the egg yolks along with lemon juice. Season the dressing to taste with kosher salt,
black pepper, and Worcestershire sauce. Add half the grated cheese.
