Sweet Tooth: Caramelised Mango & Pineapple

The Recipe
 

Cooking time 20 minutes

Ingredients)
1 mango peeled and sliced into 4
1 small pineapple peeled cored and sliced into 2 segments
1 tbsp butter
2 tsp brown sugar
1 tsp water
Juice of lime
A handful of mint leaves
A handful of toasted and crushed peanuts
1 scoop vanilla ice cream
1 tbsp fresh coconut shavings
1 tsp honey

1 mango peeled and sliced into 4
1 small pineapple peeled cored and sliced into 2 segments
1 tbsp butter
2 tsp brown sugar
1 tsp water
Juice of lime
A handful of mint leaves
A handful of toasted and crushed peanuts
1 scoop vanilla ice cream
1 tbsp fresh coconut shavings
1 tsp honey

Step 01
Nicely peel the pineapple and cut into 4 slices.

Step 02
Similarly, cut the mango into 4 slices.

Step 03
Melt the butter in a heavy frying pan and add the sugar.

Step 04
Once the sugar begins to caramelise, add a few drops of water and the lime and cook until syrupy.

Step 05
Add sliced pineapple to the syrupy mixture.

Step 06
Add sugar to the mixture and toss the ingredients.

Step 07
Now add sliced mango.

Step 08
Sprinkle mint leaves.

Step 09
Then add peanuts to the mixtures and toss for 4-5 minutes.

Step 10
Stack the caramelised fruit on a plate and add a scoop of vanilla ice cream.

Step 11
Scatter over cocunut shavings and pour honey over the mixture. 

Step 12
Add more peanuts and serve.

Caramelised Mango & Pineapple

There are many ways to spike this dish. After you have prepared the carmalised fruits, take the pan off the burner, add some rum, and then slow-cook it again, till the rum and caramel melt and blend together. In the process, if your sauce begins to thicken or clump, simply add a teaspoon or so of water.
