1. Green Omelette
Whisk eggs with a fork and season with pepper, salt, and chives. Take a small non-stick pan and heat the butter over medium flame. Following this, add egg whites and let them spread evenly across the pan. Allow the eggs to settle underneath for about thirty seconds. Garnish with spinach, avocado and sprinkle some feta cheese on top and allow it to melt. Using a fork, gently fold one side of the omelette over the filling. Serve hot with toasted multigrain bread.
